PICK UP

1          ea        spaghetti portion – 175 gm
3          oz        vegetable stock
2          T          butter
1          c          fried zucchini
5          gm       basil, sliced
10        gm       parmesan, shredded
1          ea        basil leaf, large 

Drop spaghetti portion in boiling pasta water and cook for 4 minutes. In a saute pan add stock, butter and zucchini and reduce. Add cooked pasta and toss and reduce until the sauce is nappe. Add basil, toss pasta and plate. Plate pasta in the middle of the bowl and garnish with parmesan and basil

SPAGHETTI

METHOD

Add pasta to a boiling pot of salted water and cook for 8 minutes. Drain pasta, transfer to a parchment lined sheet tray and toss with olive oil, reserve.

FRIED ZUCCHINI

200      gm       zucchini, thin sliced

METHOD

In left fryer drop zucchini and cook until golden brown, drain and reserve.
