ALBONDIGAS (MEATBALLS)
Ingredients:
5 lb pork 30%fat
5 lb beef
1 cup celery, smal dice
1 bunch oregano, chopped
1 cup red dice onions, small diced
3 each eggs
½ cup panko
½ cup milk
1 ½ cup px
45 grams salt
1 cup golden raisins
1 cup pistachio, toasted and chopped
½ tsp cumin
½ tsp coriander
½ tsp black pepper

Cook in the combi oven 125•
Fan #3 100% humidity
Cooking Method:
1) Combine the milk and panko and reserve
2) Place the pistachios and raisins in a saute pan and cover with the PX wine. Bring to a boil to plump the raisins, then remove to cool
3) In a bus tub, place all the ingredients and mix thoroughly to combine
4) Using a Yellow Handle Disher (.46C) portion the mixture onto sheet trays lined with parchment.
5) Using hands, gently roll the portions into balls being careful not to overwork them and spread evenly over 1 and 1/2 sheet trays
6) Adjust the Rational Oven to 400deg. / Fan #3 / 100% Humidity
7) Place the oven probe with the tip in the center of one meatball and set the temperature monitor to 125deg.
8) Once finished, leave on sheet trays and move to walk-in to cool completely.
9) Once cooled, move to 1/3 pans, label and store.
