PICK UP
500      mL       lettuce, iceberg chopped finely
100      gm       chickpeas
120      gm       cheese, mozzarella
75        gm       cucumber, small dice
75        gm       tomato, small dice
1          tsp       basil, chiffonade
120      gm       vinaigrette, red wine 

In a mixing bowl, add lettuce, chickpeas, cheese, cucumber and tomato.  Pour dressing over the top and gently mix well, being careful not to bruise the lettuces.

PLATE – Bowl, 12” round white, chilled

Mound the mix into the center of the bowl, top with basil and serve immediately  

VINAIGRETTE, RED WINE
1000    gm       olive oil
1000    gm       grapeseed oil
1000    gm       red wine vinegar
125      gm       dijon mustard
60        gm       salt
10        gm       honey
5          gm       black pepper, ground 

Place all ingredietns in a bain marie, blend using an immersiion blender until fully emulsified. Taste, adjust seasoning if needed. Store in a 4 quart container
