1          gm       chive creme fraiche – per chip
1.5       gm       caviar – per chip
2          gm       chives, sliced 

Per chip; place 1 gm dollop of chive creme fraiche in the center of chip and top creme friache with 1.5 gm of caviar. Place 6 chips on a linen lined plate and garnish with sliced chives

CHIVE CREME FRAICHE

375      gm       creme fraiche
15        gm       chives, sliced thin
4          gm       salt 

METHOD

Combine all ingredients in a mixing bowl and whisk to fully combine. Taste, adjust seasoning if needed. For service, whip in kitchen aid to stiff peaks
