BAKED BRANZINO

PICK UP

1          ea        branzino filet
1          ea        branzino veg kit
2          oz        branzino butter
3          gm       parsley, chopped 

Place branzino in steamer and cook for 6 minutes (fully cooked). In a saute pan add branzino veg kit, branzino butter, parsley and warm. To plate place the fish in the center of the plate and pour sauce over fish, serve.

PLATE – large round SVB

BRANZINO VEG KIT

1          ea        fingerling potato, baked peeled sliced
4          ea        olives, cut in half
1          ea        caperberry, cut in half
13        gm       capers 

METHOD

Combine all ingredients in a cup deli, date and reserve.

BRANZINO BUTTER

450      gm       butter
100      gm       water
75        gm       lemon juice
8          gm       salt
1          gm       guar gum 

METHOD

In a pot over medium heat add all ingredients except guar gum, cook until butter has melted then remove from heat. Add guar gum and blend with immersion blender. Hold warm for service.
