CEVICHE MIX

Ingredients:

2.5 oz diced fish 
1 oz red onion
.25 oz lime juice
1 Tbsp chopped cilantro
2 oz diced avocado
Yucatan green hot sauce to taste
S&P to taste

Cooking Method:
1) Combine fish, onion, lime juice, cilantro and a conservative pinch of salt and pepper and 3 drops bottled hot sauce in a large bowl and mix well.
2) Taste for seasoning and adjust
3) Add avocados and mix gently
4) Reserve for service

Almonds Seasoning:
2 cup paprika dulce 
2 cup sugar 
2 cup salt 
½ cup chipotle powder
